You can make chia pudding anytime of day, but I had to make it quietly this time because everyone was sleeping. Shhh.

To be completely honest, when Jason started making chia pudding a few years ago, I.did.not.like.it. Ewww. But, as I tell my kids, “Try things again from time to time. Your tastes might have changed.” Which is true, in my case, this time.

Chia seeds are a bit weird. Unique and fun, shall we say? They don’t have much taste but they are super healthy for you. They are high in fiber, omegas, antioxidants, and other beneficial vitamins. They absorb the liquid they are in. So when we add them to milk, they soak it up and you have these slippery little spheres that slide down your throat like regular pudding. NOTE – taking a spoonful of dry chia seeds solo is not a good idea. They will soak up your saliva and you’ll have a mouthful of “glue” – of which is a challenge to swallow.

You can add chia seeds to just about anything. We like to add them to baked goods, smoothies, power balls, and sprinkle them with hemp hearts and sesame seeds on top of a salad. Yum.

Here is my super simple Chia Pudding Recipe

  • 1/2 cup coconut milk (or whatever milk you prefer)
  • 1 1/2 Teaspoons chia seeds

Options:

  • Fruit (berries or bananas are delish)
  • Sweetener (honey, maple syrup, sugar, stevita — I switched to “Stevita” because my stevia had other “bad” ingredients in it. Check your label.)
  • For CHOCOLATE add 1 Tablespoon cocoa powder.

Stir, shake, do a little dance, place in the fridge for several hours to set, and then enjoy!
